Almost everyday, friends or family members ask me what I eat. Most of them that have known me for quite some time have seen me lose and keep off 35 lbs. for over 4 years now. And pretty much anyone who knows me knows that I am passionate about healthy living and clean eating. They want to know how I have kept the weight off and what a Health Counselor gets down with at the dinner table. However, they assume that eating a high-raw, mostly vegan and gluten-free, whole foods diet is boring, unsatisfying, and just a bunch of “rabbit food”. They tell me they could never eat the way I do because it would be tasteless and too difficult, or they incorrectly assume that I have kept my weight off eating teeny-tiny portions.

These assumptions couldn’t be further from the truth.

I wish I could show them that there is a world of food and flavors that are so satisfying if they would just give it half a chance. I want folks to know that healthy foods don’t have to be difficult to incorporate into your daily routine and that you don’t have to starve yourself to keep weight off.

So I decided to use my blog as a tool to not only answer the question “So, What DO you eat?”, but to show healthy eating can be done without spending hours in the kitchen and without deprivation. In fact, I eat more now than I ever did when I was following strict diets and eating “diet” foods.

Take a look at the video and see what I ate on a typical work day.

Some of the things you’ll see are:

  • Organic coffee with hemp milk
  • Green Smoothie
  • Kale salad with lentil sprouts
  • Gluten-free Pumpkin Muffin
  • Coconut Ice Cream

Granted, I don’t eat the same exact meals day in and day out; my daily diet changes based on the season, weather, activity level, if I am traveling, etc. However, this gives you a good idea of what my diet is like. There are some staples that I do have everyday, like lots of greens (more on that in another post!). Mainly, I hope this video shows you that with a whole foods diet, you can be healthy and satisfied. In fact, I was so satisfied, I didn’t even have room for the dessert I mentioned in the video!

Today is an exciting day for me…and for you! Starting today , I am officially launching my weekly blogs for AnitaAvalos.com! The blogs will post every Monday, Tuesday, and Wednesday, with an eventual evolution to 5 days a week.

Here’s what you can expect. Mondays will be themed “Motivational Monday”. Let’s face it, we all need a nudge on our paths from time to time. On this day, I will post something to inspire you. Whether it’s a quote or info on food safety, these posts will motivate you to keep moving forward on your quest for a healthier, happier life.

Tuesdays will be called “Tasty Tuesday”. These posts will feature anything from a recipe to try, to food product reviews, to healthy restaurant reviews, or even vendors to seek at the local farmer’s markets! Get your taste buds ready and bust out your cutting boards because it’s going down!

Wednesdays will be either be “Workout Wednesday” or “Wellness Wednesday”. On “Workout Wednesdays”, you will find info on where I enjoy breaking a sweat, how I find the time and how to start incorporating these ideas, and what has worked for me. I plan to feature teachers and trainers now and again on these posts to keep it fresh and learn from the experts. I am a Kids’ Yoga Instructor, not a personal trainer . But, as an everyday person, I hope I can inspire you to set and meet realistic fitness goals and HAVE FUN too! For the “Wellness Wednesdays”, I will give you tips on how you can increase your overall sense of wellness and health. The posts may cover anything from green beauty/personal care product reviews to supplements to how to sleep better. These will be little jewels of info that can pay off big!

As you can see, these posts will cover more than just diet. They will cover all aspects of health and happiness because that’s what make Holistic Health Counseling so special; it’s all about the interconnectedness! Let’s take this journey together and have a blast while doing it! And if there are certain areas/topics you would like to see on the blog, please feel free to leave me a comment regarding that and I will do my best to address it on the blogs.
